Our tarragon is dried within hours of harvest so that it retains bright green color and fresh herb flavor. The light to dark green leaves are pleasantly aromatic with a licorice-like taste. Use to flavor vinegar, herb butter, and dressings for po-tato, tuna, chicken, egg and pasta salads. It is an essential herb in classic French cuisine in béarnaise sauce, tarragon chicken and fines herbes omelet. Use a light hand when adding this fragrant herb to your dishes and add it near the end of the cooking time. Substitute 1 tsp. dried tarragon for 1 Tbsp. chopped fresh tarragon.
