I currently own the fine steel and the polishing steel. I usually start with diamond sharpening stones, but once I get a good edge the steels suffice. I just bought new ones to replace the ones I have had for 9 years. I can see the difference between the new and old, but 9 years is a long time, and the new ones appear to be of the same quality as the originals. II do a lot of whittling, and also love to cook, using me j.a. Henkel knives.
