Does it need to be tempered?** A: I don’t believe a dark chocolate can be utilized and converted into a white chocolate. White chocolate is from a different portion of the plant (I believe from the outer shell). **Q: What is the percentage of cocoa butter is in this white chocolate?** A: Don't know the exact percentage-but it is the second ingredient listed after sugar-which is a good sign. I've used it for a couple of years & it works well for my uses (white chocolate cinnamon Almond Toffee)-melts well (I use microwave method on wrapper), tastes nice. One of the VERY few "White" Chocolate options that actually includes cocoa in the ingredients & is reasonably priced. I won't be buying this again.
