A Great Chef's Knife
This knife was purchased to replace a similar, but much more expensive, knife from a different manufacturer. I already had experience with a different style of Masahiro knife, so I expected high quality and good steel, but I have been extremely pleased with this knife. I sharpened the knife myself right after purchase, even though it arrived already sharp from the factory, and it is a great performer on the wide variety of cutting tasks I put it to. This knife is built for daily use, and it will get it! I exect good/great edge retentention based on prior experience, but I do use a hinoki cypress board for all my Japanese knives.

Beauutiful and SHARP!!
Yes, beautiful with "some" defects. Such as; the fit of grips to the blade shank and butt of the grip. BUT!!!, SHARP!! Should have been trained in better knife handling in the Boy Scouts, instead-mechanical engineer. Back to my cautions- as I was examining this device, I sliced a very thin piece of skin off of my thumb, WOW!! Please be careful. If you want a tool or an instrument that CUTS!! This is the one. But, my only concern now is how to maintain the edge?? Honing or wet stone. Please let me know-if you know.🤔

Buy this knife, don’t hesitate, don’t second guess yourself. Just buy it! It is BADASS. But seriously, I’ve been a professional chef for 25+ years and this knife will cut through anything. Line cooks hopes, servers snarky attitude, a well done steak or 500lbs of carrots and it will still be hungry! Just please, watch your fingers...

Sharp. Light and beautiful
Excellent knife for only $100. Incredibly sharp and light. Will definitely buy it again

Fit and finish was very disappointing.
The tang that wrapped on handle was very rough & at some point did not even meet. The roughness is dangerously sharp & could cut. I suspect item I received should have been marked as second quality; otherwise Masahiro’s quality control failed. Returned.

Great knife, very useful but heavy.
The knife is excellent and sharp. It is balanced and cuts well. I have used it with meat and vegetables and it has worked very well. But… it is heavy. Using it for a long period of time will wear you put. Having not had to sharpen it yet, I don't know how easy that will be.
