20 some years ago I was going through Johnson & Wales University for culinary school. F. Dick were the knives that were issued. Honestly, the ONLY thing I liked out of that kit was the steel.A steel IS NOT TO SHARPEN knives. A steel merely refines and trues the edge of the knife. Properly used, this is a helluva good steel and because it is long, you can sharpen nearly any knife in your inventory.

Thought I'd move up and buy from a quality mfgr. - alas, my Shun knives sharpen faster and easier with MUCH LESS EXPENSIVE items - I can't believe how difficult it is to get an edge on my chef knives with this steel - already ordered the less expensive model after having this less than a month.
