Excellent value for an excellent product
We have to use OTTO’s cassava flour as a substitute for conventional, wheat, flour, due to our son’s mass cell activation syndrome. Otto’s is the only cassava flour product that I am aware of that is not fermented in the production process, which keeps the histamine levels down, and this is very important for people sensitive, such as my son, to histamine. OTTO‘s cassava flour is absolutely delicious for baking cakes making homemade tortillas, donuts, brownies, breading for chicken or steak and many other cooking and baking needs. When my wife started using Otto’s cassava flour, I was skeptical of how good of a substitute it may be, but I actually prefer it. It has better texture and flavor in my opinion than traditional wheat or corn flours, and being able to find it in the 15 pound bags has reduce the cost of it to be far more affordable, since we go through so much of it. I would recommend this product to anyone is it has gluten, allergies, histamine intolerance, or just looking to try something outside the regular wheat flour box, get a 1 pound bag to start with and you’ll see what I’m talking about and you’ll come back for the big bag because it’s a far better value and worth it.

Gluten-free ricecakes!
Prior to trying this product, in the past, I've only used Cassava Flour from the brand, Bob's Red Mill (which is EXCELLENT). This brand, Otto, is EQUALLY AS EXCELLENT. A bit cheaper than other brand when purchasing the larger bags. Easy to use (for making 'Gluten-Free ricecakes'). The consistency and texture of the flour was just as sticky as the other brand that I used in the past. Tastes wonderful! It's definitely gluten free bc I am severely gluten-sensitive & had no issues w/ this product.

Game-Changer for Gluten-Free & Paleo Baking!
I’ve tried nearly every gluten-free flour under the sun, and Otto’s Cassava Flour is hands down one of the best ones I’ve ever used. With diet restrictions limiting potato, it was hard to find an all purpose gluten free flour without potato starch until I came across this! The texture is smooth and powdery — not gritty like some others — and it behaves so similarly to wheat flour. What I love most is that it’s a single-ingredient flour made from 100% yuca root, which fits perfectly into my gluten-free, grain-free, and Paleo lifestyle. It’s not bleached or processed with chemicals, and I really appreciate the clean, minimally processed product. Side note: I did exclusively use this with recipes intended for cassava flour. Bonus: My extended family who does not eat gluten free loves everything I make with this flour — and that’s saying something! ✅ Pros: • Great wheat flour substitute (1:1 in many recipes) • Totally grain-free and nut-free • Neutral taste (no odd aftertaste like coconut or almond flour) • Easy to digest 🚫 Cons: • Slightly pricey — but worth it for the quality • Can clump if not stored well, so I keep it in an airtight container. If you’re baking gluten-free, Otto’s is a must-have in your pantry.

Seems versatile
So far we've used cassava flour to make gluten free tortillas twice. They don't taste exactly like what I remember white flour tortillas to taste like, but with multiple food limitations it's nice to have something other than corn. The cassava tortillas seemed to be a bit like pita bread. As for grit or sand, I didn't notice any. There was a small hard, inedible bit inside one bite. We also altered a banana bread recipe that usually only takes starch with some cassava flour and it made it very gummy and wet inside. We'll have to experiment with it more. Excited to try/find some other recipes. Update* We've purchased Otto's Natural Cassava flour a few times now. Usually we use it for tortillas made stove top in a cast iron skillet with a lid. They turn out good and soft. Another way we like to use the cassava flour is for tostadas or crackers. We bake the tortillas in the oven and they turn out crispy. This is faster if you are making a large amount. They are kinda hard on your teeth if you store any leftover in the refrigerator. To reheat, you can toast them lightly in the toaster oven. Be careful they get hot! My daughter has used the cassava flour in place of wheat flour in a yogurt cake recipe and it turned out a good flavor and texture. The conversion measurement to substitute for wheat are on the bag and Otto's website.

Great flour substitute
It has conversion info on it , very helpful. Ground evenly. Works well for special diets in my family. Works well in baking . Have made muffins , zucchini bread and fruit crisps with no problem.

My daughter and I both have multiple food allergies/sensitivities and this flour allows us to have tortillas for our ‘bread’ and the large size allows us ‘bread’ for over a month. The quality is also really good as we’ve tried a few varieties

Really delicious and I will be buying again. I had never used this type of flour before but it was recommended by Chefs Steps and it is amazing.
