Q: What size hose fittings are included? are they 1/2" npt x 1/2" hose?

Inlet/Outlet: 1/2" male thread. Fit both 1/2" NPT and BSP female thread.The brass hose fittings comes with the pump fits hose with inner diameter of 10 mm.

Q: Could you control the flow rate with a ball valve, or would that burn the motor out?

I am using a ball valve to control the flow rate. I use this as a brewing pump for kettle re-circulation and filling of the fermentation vessels. It's survived three brew days so far without issues. Make sure the ball valve is on the upper outlet and not the inlet.

Q: Does this pump turn its self on and off

This pump runs when the power supply is plugged into a wall outlet. It turns off by either unplugging from the wall or by disconnecting the mating male/female connectors in the cable from the pump to the wall supply. You could probably externally turn it on and off by putting a relay or other control in the cord at the connectors.
