I came to this book looking for solutions to my medical problems and learning to rethink all I have learned in my 70 years of life. In the last year I have lost over 180 lbs, not voluntarily, but because I can' hold meat protein down, I have irritable bowel problems, lactose and gluten sensitive, depression we can go on from there. I almost didn't get this book because of cranky pants' review. I would have been the looser. This is a great book. It is full of information that anyone who wants to make cheese of any kind needs to know. It was not represented as a recipe book. It just has the added bonus of a few recipes to use the product. I was very impressed with the way he describes every step to help the uninitiated in feeling confident enough with the process to try this on their own. I was brought up on an 80 acre self-sustained farm. we raised our own. Chickens for food and eggs and for keeping the garden free from weeds and bugs. We raised our own cows for meet and milk. We never did make our own cheese. We did the basics like butter and cottage cheese. So this book filled in the necessary steps I lacked. Don't pay any attention to any negative reviews. This is a book I'm buying for all of my children and family. That is the highest praise I can give a book, This book is going to be kept by my right side for easy reference until I have a lot of the steps memorized. Really excellent starter book!
I purchased a few books on cheese making at the same time as this one. Just getting back into all of these "back to basics" skills that I played with in the 60's & 70's. My grandson read all the books with me and this was the one that he liked the best of the lot. He is new to all of these ideas and he had no trouble at all following the recipes and the procedures through. I learned some new things as well, but then I am no expert! Many recipes and very useful
This book has many recipes on butters, cheeses yogurts and even sour cream. The only real downside to this is that quite a few recipes require special bacteria cultures to start. For example farmers cheese recipe in this book requires a bacteria starter culture to go on. There are youtube videos showing farmers cheese being made with milk and lemon juice. I suppose this is aimed more towards professional chef's than amateurs. but otherwise this book is useful to have on hand in case the internet goes out.

Potential cheers makers: buy this book!
We have begun our journey raising goats, and this book was the perfect reference for me as I began to make cheese. I really knew very little about cheese making, but because of this guide, I now know so much more! Everything is laid out simply, but completely. It is easy to understand and follow. It has been a dream of mine to raise dairy goats and make my own cheese. This book has made it possible. I'm now able to branch out to other sources for recipes, and to even try some of my own, but to any new cheese maker, I highly recommend you get this book, read it over and over and try the recipes EXACTLY as laid out. You will learn so much. I know I have.

This book is essential for cheese makers
I made my first own cultured buttermilk and used it then for making quark. It worked and was delicious! The book contains a short introduction into cheese making and gives an idea what is necessary when you start to make your own yoghurt and cheese. The instructions are clearly written and easy to understand. This book contains a few recepies and some hints of how to use the self-made cheese products and what better not to do. I like this book and would recommend itfor beginners and more advanced cheese makers.
