Yes you can use any type of butane cylinder with the chef master stoves. Just check that they are 8oz canisters.

Q: How long will the fuel last?

I have used mine for about 2 hours now and still have about 1/4 of a canister left

Q: Will it fit a small saucepan with a bottom diameter of 5.5"?

Yes a small pan will fit but watch the heat and flame height. It gets very hot fast.
