Fantastic product.
One of the best products I even used. Great quality, makes the best pasta, and the best pizza dough, too. The recipe on the bag is for an absurd amount of dough, but it’s easy enough to scale it down. I personally use my own family recipe for dough and it works great with this flour. It drivers a smoothness to the dough that is very unique.

Great for "celiac" sufferers
My wife was diagnosed with celiac disease ten years ago and gets very sick when eating gluten, or so we thought. We have tried all kinds of gluten free flour and it's never the same. So we decided to try this for as I'd heard it wasn't the gluten but the processing in America that makes some people sick. Sure enough! We've had fresh baked bread, peanut butter cookies, and fried chicken using this flour and not only is it fantastic tasting, she's had ZERO issues. Americans are being poisoned by our food processors. TRY THIS FLOUR! You'll be glad you did.

An excellent product
I use 00 flour for 2 things, pizza and bread. The first thing I used this for was bread. I used my standard Italian bread recipe that I’ve been using for many years. The result was a live, buoyant and supple dough which became a fluffy, delicious bread. I highly recommend this flour. Chef Mike, retired. UPDATE: I recently used this flour for pizza. I made a Napoletana pizza with hydration of 65% and a short 9 hour fermentation. The crust was airy and crunchy on the cornichone (edge) and bendable in the middle. The taste is what struck me. It was as if I’d fermented the dough for 48 hours. It was amazing! I’m now a FORMER Caputo guy.

Yes, it makes sourdough! Yay!
This flour is perfect! Now, not only do I have clean flour with none of the US junk in it, but I successfully made sourdough with it. The value is absolutely there with the bag being giant, as pictured! Get it! The bag is also well made—contrary to flours here.

Great for my sensitive stomach!
I LOVE this flour! This flour has given me the chance to eat bread again after 8 long years of not being able to. I took the chance on ordering this and I sure am happy I did. I thought I had a gluten intolerance, major stomach issues Every time I consumed Any flour based food. Not with this brand. Fabulous! I have now taught myself how to bake my own bread and will be making my own pasta soon. I no longer have to go without or watch others eat pizza,breads sticks or any type of pasta,I too can enjoy. This flour Does contain gluten ,that's how I know my problem isn't with gluten. It must be " Other Ingredients " in the many other flour brands or production of the wheat before it hits the grocery shelf, that I have such a strong negative reaction to. Polselli Classica will Always be in my pantry. This flour came packaged very well,no insects,smell was spot on and no discoloration. The price range is higher than your run of the mill flour,However, I am Happy to pay the difference for this High Quality Flour. I want to thank the company for producing A+ products. Bring Happiness Back to Your Life....
I have been gluten-free for many years, but discovered that I could eat items made with flour from Italy. Pasta once again became my friend. I found my way to Tuscany and enjoyed every minute. I ate pasta and bread galore. When I returned, I searched online for a reputable supplier of authentic Italian flour, grown and milled in Italy. The Polselli Classica did not disappoint. This flour certainly did its thing and held up to anything I ate while in Italy. A good product, great for pasta, bread, pizza dough, and anything else you can think of. If you have a gluten intolerance, I suggest trying something made with authentic Italian flour. You will bring some happiness back to your life....

We have pizza night once a week and I can tell the difference in taste and texture vs the local bread flour. It's a bit more expensive, but a fraction of the price ordering out pizza. 5kg size very handy.

Really top quality flour. Had used caputo pizzeria blue for a long time before this and enjoyed the results but find I get a much more flavoursome and easy to work with dough from this. Good strong gluten and can push the hydration relatively high - have gone up to 70 with this stuff. Find it works great doing 24 hours or less prove.
