Superb texture and crust for pizza!
This is one of the more sought-after pizza flours. It has the reputation of being the most authentic Italian source of flower used in Italy. But it is quite expensive considering. You need to determine whether the extra cost is worth buying? It is a little harder to work with but more for giving when making pizza crust. You can also use ,which I do use, organic bread flour. The organic bread flour tends to have a little more flavor to it but doesn't quite have the crisp and crunch of the 00 flour. That's one of the trade-offs you'll have to decide for yourself. You can also blend the 2 flours. It will take some experimentation to what percentage of each makes your pizza turn out the way you want with crispiness and extra flavor that the bread flour produces. The images I'm showing is 100% 00 Caputo flour. The crust is fantastic and holds up even under reheating without any negatives. All in all it is a matter of your own personal choice. If you can afford the 00 flour which is double the price of organic unbleached bread flour at approximately $3.55 a pound for 00 flour and a $1.55 for the organic unbleached bread flour up per pound. So for every pie you make with 00 flour you can make two with unbleached organic flour. But again it's all about the taste and texture so you need to experiment.

Che Buona farina! authentic taste just like nonna used to make!
Excellent flour to use for making pizza, calzones, bierocks, and bread. With such minimal ingredients needed, why not get the very best to make your pizza crust phenomenal. When prepared it is really elastic and smooth and tastes like a really authentic. I normally feel heavy and bleh after eating bread, but items made from this flour just really agree with me and I don't have a stomach ache from it. It must be the real Italian flour grown by European standards.

Great Flour for Neapolitan Crusts
Neapolitan pizza dough is one of the most difficult to make, but if you don't use high-quality "00" flour, you don't stand a chance. The Caputo "00" flour is the top of the line, and gives you the best chance of making a great dough.

Not as fresh as it should be
Great flour for use in a pizza oven. I would have given five stars but the best used buy date is only one month away from the purchase date which tells me it’s not the freshest. I would have expected better for the cost.

Tastes the same as the pizza from the Italian city of Naples!
I make a lot of Neapolitan pizza's and the Antimo Caputo Pizzeria 00 Flour (Blue) flour is my favorite. I have used several brands but found that this one tastes the best and the same as the pizza from the Italian city of Naples. The flour is very fine and never had any issues. It holds moisture perfectly!
