Review: Great Rub for Pork and Lamb - Very nice, balance rub for pork OR lamb. Best if it is allowed to sit on the meat overnight and then grill the next day. Interesting blend that is slight spicy but really brings out flavor. This is expensive, but you do not need very much for full effect. I realize that I could blend my own but it is nice to reach in the pantry and come out with quick flavoring variety.

Very nice, balance rub for pork OR lamb. Best if it is allowed to sit on the meat overnight and then grill the next day. Interesting blend that is slight spicy but really brings out flavor. This is expensive, but you do not need very much for full effect. I realize that I could blend my own but it is nice to reach in the pantry and come out with quick flavoring variety.

I made a batch of ribs using this rub and brought them to a family gathering. My ribs were more popular than the "grill masters" of the family (uncle & male cousins). I mixed in about 4 TBS of brown sugar, and rubed into washed and patted dry port rib rack. Place upside down (hallowed curve facing up) and place 2 pats of butter on the middle of the rib rack. Double wrap in foil (yes, double wrap). Place on baking sheet and add about 4 cups of water to the pan (don't cover the ribs, just in the pan). bake at 350 for 3 hours. I finished them off by 'crusting' them, throwing them on the grill for about 4 minutes per side and then they were good to go. Meat fell off the bone and was so juicy and flavorful- no sauce required!
