I have never considered it because mine seem to stay sharp. **Q: cut through lobster claw??** A: Like butter! These cut bone. Crustacean exoskeletons are no match for swiss engineering. **Q: Cuts through lobster tails?** A: I've never used it on lobster, but I would have to say, yes. It will cut up a whole chicken in about 5 minutes. If it will cut through a chicken thigh bone, I have to believe it will cut through a lobster tail.
