Great for trimming large cuts of beef
Great knife. Sharp and great for trimming large cuts of meat. We got it for trimming and dividing full briskets. It does a great job.

America’s Test Kitchen was right—it's "Old Faithful" for a reason
"I’m not sponsored by anyone, but I always follow America’s Test Kitchen recommendations, and they dubbed this line 'Old Faithful' for good reason. This Victorinox Fibrox Curved Boning Knife is my favorite budget-friendly knife. It’s flexible enough to get right against the bone but sturdy enough that it doesn't feel flimsy. For the price, you really can’t beat the edge it holds. If you want professional quality without the professional price tag, this is the one to get."

Grey Market Commercial Sales knife - "NOT FOR RETAIL SALE"
This knife came packaged in a brown box saying: "This product is imported from Europe without the manufacturer's consent and may differ from local versions. . . The warranty may be void in your country of delivery. However we offer our own warranty. . . By accepting delivery, you acknowledge and accept these terms." And there is more but that's the important part. The knife came in a cardboard sleeve and appears to be the right model. It is sharp but just barely and the knife edge shows clear grinder marks and has not been polished. The Victorinox cardboard sleeve clearly states "NOT FOR RETAIL SALE - COMMERCIAL USE ONLY. " "Semi stiff" means pretty stiff. Very little flex even under pressure. A bit of work on my own diamond stones and leather strop improved the edge. The seller's information explains they import grey versions but they have good customer warranty experience using their own warranty. Still it's frustrating to go to the "official" Victorinox Page for shopping but get linked to any one of a number of non official vendors and not Victorinox themselves.

Super sharp
I really enjoy this amazing knife. It is really sharp and there are 2 specific types of meat which are brisket and pork belly. Overall, this can cut any meat but it works best with brisket and pork belly

The right tool for a difficult job!
Bought the knife to help prep Eye Round roast for Sous Vide cooking- <Thanks to Guga from Sous Vide Everything> Eye Round roast from BJ's had lots of silver skin and extra fat that needed trimming. The Victorinox knife was sharp as could be and make a difficult task easy. As I learned to use the curved blade things got even quicker and easier. My only complaint is that there was no sheath for the knife. Got rid of an old Copper Chef (don't laugh) blade and put the Victorinox in the wood block. Better results with half the effort- EXCELLENT quality and value!!!
