It is an addition to my 13 piece classic block set. I needed this knife and a diamond sharpening steel to complete my needs. This knife is perfect for filleting fish;especially flat fish such as sole, plaice and suchlike. The blade is the desired shape to allow you to manoeuvre close to the bone and the blade is also flexible enough to maintain contact with the bone but not too flexible that it causes the flesh to be compromised. I originally was going to purchase the 8” blade but I’m glad I settled on this 7” as it is definitely the perfect length. These Wusthof knife’s are superbly made of high quality materials.
