A: The honing sticks set it 1 angle so it's a single stage all you do is set it on the counter or somewhere And draw your knife through it

A: no, but there R a number of other simple sharpeners that will keep the edge as sharp as U need it to be. i have a small model that suctions to the countertop and does a credible job of sharpening the blade.

Super sharp, thin, flexible, just perfect for filleting fish. Don’t use it for anything else though, like cutting through thicker bones, because you could damage the edge.
