Q: are there external pockets for water bottles?

Yes, there is a pocket on each side. I keep a water bottle on one side and an umbrella on the other.

Q: Is this large enough to carry a jacket, capris, t-shirt and a pair of shoes for a one day adventure hiking and swimming?

It will easily accommodate all of the items you listed, with room to spare, after adding a sandwich and a water bottle or two. Question is do you really need all of the great security features for a hike in the woods. The extra security (locks, etc.) adds a bit of weight. Overall, it's a great and durable bag that's quite roomy. More designed for city travel among pickpockets and the like, but will serve the described needs in the woods.

Q: ok for airline carry on..or slightly too big?

The carry on dimensions are 21.6 tall, 15.7 wide and 7.8 inches deep. There are several sizes of these packs. I bought the 25 liter one, which is one of the biggest and it meets these requirements.
