Can you make tortillas with this ?

I wouldn't, you need Qoaker Masa Harina corn flour and water. Get yourself a tortilla press for perfect tortillas. Corn meal is fine for muffins and bread, but corn flour for tortillas. Or just buy real made in Mexico tortillas on Amazon, they're great and can be kept for a long time or freeze them.

Is this product Glutin Free?

I think so, it is just corn. I am gluten free and I use it, I am not coeliac though, so it isn't so crucial for me regarding the manufacturing process in regards to possible cross contamination. It might be worth contacting Quaker direct and ask to be on the safe side if you're coeliac.

Is this real cornmeal, (i.e. like flour) not polenta. I want to make corn bread, and even fine polenta makes the bread too 'crunchy'.

The cornmeal is not like flour consistency, it's fine and it's what I used in the States all the time to make cornbread. I've not used polenta so can't compare. I love the cornbread it makes, can't say it's crunchy. My recipe uses all purpose flour as well. It's delicious! Good luck.
