Q: How secure is the head to the handle? I’m not seeing how these “secure” or latch in the listing images, it looks like these just slide together.

It does slide on but is very secure. The tip of the handle has a smaller “post” that the head slides onto. The post is part of the handle, not a separate piece. The head can be removed for cleaning as well. I’ve been very happy with my purchase.

Q: Can the rubber piece pop off the stick and get stuck inside a bottle?

The end is removable, however, I have never removed it on mine. It has never come off on its own, so I don't think having it come off inside a jar is an issue. Peanut butter it the thickest substance I have scraped and there was no issue with it. This is a great kitchen tool.
