Servisol Had a bad reputation for melting plastic, and I have destroyed things myself with its use. Is it still just as bad on plastic?

Well I used this on a pretty big section of my keyboard and i'm happy to report no such problem and the switches are nice and smooth. However I know you have to be careful when buying these things since several of them do contain different agents that can destroy plastic, just have to make sure you're buying the right one for what you need.

Would this be ok to clean a headphone out on an amplifier? The out is crackling when using headphones. Thanks.

Servisol Super 10 is a contact cleaner ( switches, etc .. ) I would suggest a short spray in the socket and insert the headphone plug several times ( to clear the micro debris in the socket causing the crackling ) and re-apply if necessary. This should remove the crackle - Servisol Super 10 or De-Oxit are perfect for this job.

Could I spray this directly into a jack socket on my mixing desk? My main out is crackling and wasn’t sure whether this would be safe or not?

You might find this does the trick but I think it is a bit too strong for sensitive parts. I use it for vintage potentiometers and chunky 1/4 inch guitar jack plugs etc. I find Deoxit products : D5 : or Gold or their Fadder-lube is kinder on micro plugs and small pots etc. but they are expensive.

Is this usable on a mass air flow sensor?

yes on the 12 volt block connector not the sensor
