All Professional Pastry Chefs use Matfer whisk. The metal wire is thinner than the other sizes , but this is as designed, and has a bounce which allows for comfort whisking motion and can manually whip up Meringue in next to no time..great for sauces, cream, chocolate. If you want a diverse-well designed whisk - this is a must! The handle is comfortable.as rhe diameter is specifically designed to prevent people over gripping (other brands Vogue or Schneider) have larger diameter handles and is not nice to hold and use). All the different sizes of Matfer whisks are designed slightly different to handle the larger tasks. As a professional chef I have used all the different sizes and highly rate the whole range.
