Review: Great smoked cheese. - Before I begin I have two reviews really. Cold cheese vs room temp. The cold cheese is ok. The cold non smoked version of this cheese is much better. There are some nice lactate crystals which is always an indicator of a nice cheddar. The flavor however is lacking. When allowed to come to room temperature this cheese sings it's smokey flavors, as the fat from the cheese sweats beautifully. I love Old Croc cheeses. If you haven't yet tried them, I would start with their cheddar to set the baseline, and then move on to the smoked.

Before I begin I have two reviews really. Cold cheese vs room temp. The cold cheese is ok. The cold non smoked version of this cheese is much better. There are some nice lactate crystals which is always an indicator of a nice cheddar. The flavor however is lacking.
