I cook meals for myself only and all recipes in this book make 8 servings or more. I was hoping for recipes for 2 or even 4, but 8 is a bit much. I'm returning the book.

Really tasty sounding recipes. I haven't cooked from the book yet because I just got it, but it beats another diabetic cookbook that I recently received.Good, simple recipes, with good ingredients. To the point, but with a few color photos here, and there. Lots that I want to try.  Do-able ingredients that fit my budget.Make sure to read the carbs count on each. There are some that you might need to adjust for your allowed carb range.
