This knife is superb and slicing the filet so smoothly!

I bought this to actually use to skin and carver up deer. It can be used to carve any type of meat, like filleting fish, chicken, pork, lamb, vegetables, etc. I needed a flexible blade that stays sharp to take the silver off of deer meat but that could also cut tendon and be used to debone and even skin deer to remove the hide. It's been very affective, I may get another to have two. Sometimes getting at the inside and back loins is difficult. A couple is slits with this knife and the loins pull right out. I know not everyone is butchering deer, this is just an example. This is an elegant knife and very sharp. It has an ergonomic comfortable handle, stays sharp, and cleans up easily. The handle can become slick when bloody or fat soaked but is does not stain. Just wipe it off and keep going. Its flex blade really helps get the most meat. It even carves turkey very well. It is designed well and uses carbon steel. Don't put it in the dishwasher. Hand wash it, and then put some olive oil on a paper towel, lightly oil it, and it should never rust. It does not come with a sheath, but the box is thin and designed for the knife so I didn't bother. The price is right! If you need to replace it for any reason, it won't break your bank. I'm sold on it!

Este cuchillo ha sido una auténtica sorpresa. Lo pillé porque necesitaba algo más fino y manejable para trabajar con pescado, sobre todo cuando lo fileo para la plancha o para hacer sashimi en casa, y sinceramente... no esperaba que funcionase tan bien por el precio que tiene. El filo que trae es brutal. La primera vez que lo usé me daba incluso respeto de lo afilado que estaba. Literalmente atraviesa el pescado como si fuera mantequilla. Lo he usado también con pollo y alguna carne deshuesada, y va igual de bien. El mango tiene una forma bastante cómoda, se agarra bien incluso cuando tienes las manos mojadas, y se nota que el peso está bien repartido. Lo llevo usando varias semanas y no he tenido que afilarlo aún, cosa que me ha sorprendido. Eso sí, lo lavo a mano siempre y lo seco al momento, que estos cuchillos buenos como los metas al lavavajillas te los cargas. Pros ✅ Filo muy afilado desde el primer uso Muy cómodo en mano, incluso si estás rato con él Ligero pero firme, se siente bien balanceado Contras ❌ Viene sin funda o estuche (yo le he puesto uno que tenía por casa) En resumen: si sueles trabajar con pescado o simplemente quieres un cuchillo fino, afilado y que no sea un sablazo de precio, este te va a encantar. Yo no lo cambio.
