Carbon steels knives like Shirogami or Aogami are very susceptible to rust. Even with proper care/maintenance and a strong patina, rust can still happen. This tsubaki oil is completely odorless and food grade so use with knives that see restaurant action is perfectly fine. Add a couple drops onto your knife and wipe down with either a cloth or paper towel will keep your carbon knives in tip top rust prevention shape.
