This 5 lb bag is the awesomest
I previously purchased smaller amounts of this product, but this time I went for the five pound bag, and it is the nicest blue corn I have ever seen. I havent seen a ton of it, but this is the nicest. I started putting blue corn chips in my soup for flavor, then started buying the smaller bags of this. This 5 lb bag smells so good, like wherever it was grown, which must be a nice place. Just cooking it, the nutty flavor it imparted to my breakfast gruel made me turn the stove off, and come log in to write this. Edit: After having eaten this blue corn, I have increased its proportion in everything I eat, and have ordered more. I eat less wheat, less rice, and less lentil, and more blue corn. It just makes everything better. Goes with everything, pineapple juice, mango powder, banana powder, dry blueberries, and the savory side too, goes with evrything, turmeric, dry milk, anything I mix with it, it just makes more awesome.

This makes perfect tortillas!
Because I have numerous food allergies and sensitivities, I make everything from scratch. This product is a little pricy, but not as expensive as buying pre-made tortillas. Plus, you have the added benefits of the tastiest tacos and tamales in the world.

Delicious Stone Ground Blue Corn
Fell in love with Mushroom Enchilades at Cocina Madrigal in Phoenix,Az. While on vacation. This is more like stone ground blue corn rather than true Blue Maseca flour. It rolls and flattens well on tortilla press. The flavor is rich corn with grain texture. Is is expensive with a shelf life of about 1 yr. I stored in an air tight container. Well packaged . A nice treat and my family is loving this.

So good
If you want a traditional tortilla with great taste and looks great, this is it. I did have issue where my tortillas would not puff up so i cut them with 1/3 of regular white corn masa. But when you use blue corn alone they make great tortilla, tostadas and hold up well for chilaquiles.

The Texture Should Be Part Of The Description
I love blue cornmeal but this is ground very finely, which is great for stuff like cornbread and awful for polenta. Unfortunately for me I bought it for a New Mexico recipe, blue cornmeal polenta pizza. It took more than 24 hours to finally settle so we had leftover chile for dinner instead. Other than that it’s delicious.

Reliable results
According to Amazon, I'm now ordering this for the 4th time. It gets stored in our deep freeze (minus 15 degrees) so any bugs are killed (we have a deep freeze dedicated to grains and beans for this purpose; you learn to assume that all grains, beans and seeds contain bugs or their eggs). As a busy cook I mix the masa ahead of time and leave it in the fridge to fully swell. An hour or so before making tortillas I bring the dough back to room temperature. I knead the dough well as i form the small balls for tortillas, which in turn never fail to puff beautifully when baked on the griddle. The blue masa changes its color as it goes from dry flour to wet dough to cooked tortilla, producing exotic gray-blue tortillas that we love to share with vegan/gluten-averse friends who can't get fresh, unadulterated tortillas in our god-forsaken part of the world. When I lived in Mexico (long time ago) I had to pick sticks, stones, and bug body parts (and possibly rodent evidence) out of any whole, natural agricultural products I purchased. I am not going to complain about a natural product where the main complaint appears to be it's "gritty" and has bugs in it. The grittiness is part of the stone-ground, natural charm. As I say, you get used to, um, "evidence of nature" when converting away from mass-produced corporate products. I would rather support small farms and small mills although, of course, "buyer beware." And, do freeze your natural grains. Even the "corporate" packages will get bug-infested eventually when improperly stored.

Great flavor, great price
We visited family in NM this fall and had blue corn waffles at Harry’s Roadhouse. They were surprisingly delicious and I wanted to see if I could try it at home. There is no place that I could buy the blue corn where I live so I searched Amazon for some options. This is the third time I‘ve ordered this masa. It is great and the flavor has been good for every bag that we have received. I’ve used it for the waffles but I have also made tamales with it. I could not find any regular masa during Christmas but I had this on hand and it worked great! If you are looking for blue corn masa, I would definitely give this a try.
