Mandarin style wok
I had a Cantonese style wok for years and it didn't fit with my way of cooking. It sat on a ring over the burner and you had to hold onto one of the handles to avoid jerking the thing off the stove by accident. This is a Mandarin wok with a straight handle and a 10cm flat area on the bottom. This is better for stir fry and sautéing, in my opinion. De Buyer is essentially the same as Matfer and Mauviel: they all make great carbon steel. I like carbon steel because it heats up quicker and more uniformly than cast iron, and it's lighter. This is an excellent addition to the batterie de cuisine.

Quality pan but "wok" design is debatable
Quality solid pan but design has some issues, it depends on how you use it. The small bottom is flat but still needs a wok ring to be stable because of the weight of the handle, it can have a dangerous risk of falling over with hot grease inside. I'm not sure the small bottom would work well at all on a non gas stove, and the thickness of the steel sides do not get as hot as a real wok, even on a gas stove. Heavier than a wok to flip contents. On the plus side it is a solid pan, you can cook sort of wok stir fry style, and the bottom makes a nice oil fryer. It's not totally a wok, and it doesn't have the surface area of a flat 10" skillet. So it either versatile or a compromise depending on how you look at it. It isn't as big and messy as real wok, but really isn't big enough to cook like a 10-12" skillet.

Well made!
It works great! It heats up fast on an induction stove top. It’s so-so on ease of cleaning. It took several tries to get it seasoned correctly, it’s harder than a cast iron pan. Now that it’s seasoned it works well, not non-stick but it is fairly easy to clean!

That famous De Buyer quality
I've recently gotten some De Buyer carbon steel pans and have been impressed, so I decided to get this wok to complement my large, stainless Calphalon wok. Seasoned it and got right to using it. I've got a gas stove and the flat bottom is relatively small. Consequently it wasn't as stable as I'd like on the grates. I bought a cheap wok ring which makes all the difference. It has the additional benefit of focusing the heat more on the bottom center of the wok. The wok itself is on the small side, but as there are only two of us, it is ideal for our regular use. I am very happy with my purchase.

My new favorite wok!
This wok is the easiest ever to clean! Once seasoned, nothing has stuck on or refused to come off with just a plastic scrubbier and hot water. You MUST take care of it, however, and follow the guidelines. The only small negative is that the bottom flat portion is a little small for my range top, and when empty or heating up will tend to fall sideways ... when full, not a problem. Totally thrilled with the weight and cooking characteristics!

Ho comprato il wok da 28 cm in ferro mineral b, ritengo la misura sia un ottimo compromesso per il piano cottura a gas di casa. Infatti per la cottura al salto con il wok c'è bisogno di un buon bruciatore per garantire cibi sigillati esternamente, con i succhi protetti all'interno e con il tipico sapore del wok. Questo wok di de buyer è fatto molto bene, consiglio di lavarlo molto accuratamente con acqua bollente e sapone per rimuovere la cera di protezione e di fare la stagionatura bruciando un sottile velo di olio di girasole per creare uno strato di protezione in cui cuocere. Fatelo con pazienza e magari ripetete il trattamento più volte. Dopo l'uso per la pulizia utilizzo la carta da cucina e se serve poco sale per rimuovere le incrostazioni. Prima di riporlo basta ungerlo leggermente con l'olio per scongiurare la ruggine. Consigliato a chi vuole cucinare senza il teflon e a chi adora il sapore del cibo cotto al salto nel ferro: sapori unici e ottenibili solo in questo modo. Non solo per cucina asiatica. Ultimo consiglio : comprate un supporto per wok perché la base di 9 cm è abbastanza stretta ed è più comodo avere il wok stabile sui fuochi!

Sehr guter Wok, den ich auf einem Gasherd benutze. Vor der Verwendung muss man ihn einbrennen, die Anleitung dazu liefert der Hersteller mit und ich würde empfehlen, sich an die Herstellerangaben zu halten. Das Einbrennen habe ich mit hocherhitzbarem Rapsöl rasch bewerkstelligt und die Sache ging schnell und unkompliziert vonstatten (Kurzform: Wachsschicht runter, Öl dünn an die Wände, bodenbedeckend am Boden, erhitzen bis es raucht, Öl abgießen, abkühlen lassen, dünn einpinseln, erneut erhitzen, abkühlen, fertig) . Nach der Benutzung lasse ich den Wok abkühlen und reinige ihn mit heißem Wasser und einer Bürste ohne Spülmittel. Danach wird er mit einem Tuch getrocknet und mit sehr wenig Rapsöl mit Hilfe eines Papierküchentuchs hauchdünn außen wie innen eingefettet und im Anschluß mit einem Papiertuch trockengerieben, so dass nur noch ein Hauch einer Ölschicht bleibt. Dann wird der Wok wieder auf dem Gasherd mit kleiner Flamme erhitzt/ getrocknet. So entsteht nach und nach eine Patina und der Wok rostet nicht. Anfänglich muss man beim Braten etwas mehr Fett verwenden und man sollte mit Gemüse/ Zwiebeln/ Ingwer braten, nach ein paar "Runden" benötigt man aber immer weniger Fett und man kann Fleisch, Eier, Fisch etc problemlos zubereiten. Bei mir pappt nichts an und sogar Eier gleiten geschmeidig über den Stahl .... Ich hätte den Wok gerne kleiner und leichter, dann würde es uns aber vom Platz nicht reichen, wenn wir 2 Portionen gleichzeitig zubereiten wollen. Eigentlich brät man nur 1-2 Portionen und stellt warm, wenn es für mehrere Personen reichen soll, gerade wenn man verschiedene Gerichte zubereiten mag. Bei dem Wok brauche ich zuweilen 2 Arme, wenn ich schleudernd das Bratgut wenden mag. Eigentlich ist ein Wok unten rund, sitzt auf einer Ringhalterung und wird mit einem leistungsstarken Brenner befeuert .... Dieser Wok mit kleinem, flachen Boden bietet einen Kompromiss und ich komme zurecht (unten am Boden wird heiß angebraten, oben die Ränder sind kühler und dort wird das bereits Gebratene hingeschoben oder erst mal über das noch nicht gare Bratgut geschichtet, um dann alles zu mischen und zirkulieren zu lassen). Man braucht aber ziemlich viel Muckis und wenn es zu heiss wird auch Topflappen für den Griff. Nach Eisen schmeckt nichts. Ich mag den Wok nicht mehr missen. Die Verarbeitungsqualität ist spitze.
