10 steps to get paper-crisp dosas from this tawa
This is a good dosa tawa, sturdy, strong, and with a high finish quality. Before purchasing I went through the reviews of this product and wasn't sure if I'd get good dosas but i took the plunge and here are my learnings (after a lot of research!) Heres how you make good dosas in 10 steps using a cast iron (watch the attached video): 1. Ensure the tawa is seasoned well as per manufacturer's detailed instructions. 2. Ensure you are patient (This is the most critical!) 3. Ensure to preheat the tawa on low-medium heat. DO NOT speed up the process by pre-heating on high flame. Slow heating helps the tawa retain an even heat that is essential for good bronzing of the dosa. 4. Ensure the dosa batter is at or near room temperature. 5. Check the tawa is properly preheating by lightly spraying water. It must not evaporate immediately but sizzle a bit. If too hot, spray some water to cool down. 5. Pour the batter onto lightly oiled tawa (you can completely cut out the oil if you so desire, once the tawa is seasoned really well after many times of use) 5. Now wait. Sing a song if you like, because of the low-medium heating this is going to take time. Kitchens are good places to practice singing (because of all the tiling, they're almost as good as bathroom for this purpose!) 6. Once you see the underside of the doas browing, slowly test only the edges of the dosa, to see if it is ready to flip. (As the dosa batter heats up, the pores on the iron slowly start expanding and closing up because of the heat and when properly closed will be ready to release the dosa like a non-stick. 7. The above point is THE MOST IMPORTANT and where i think most people fail. Apply too much force to try and release the dosa and inevitably the dosa will get stuck and you will need to scrape it off. 8. When the edges release with minimal force, try and slowly lift the rest of the dosa. If you encounter too much resistance, give it more time (Remember point 2!) 9. When properly done, flip the dosa (if you so desire) or take off from pan 10. Enjoy! Note: Use as much or as little oil as you like. Using a spatula (like in the video) helps to reduce the amount of oil you would normally pour onto the dosa. However, more than oiling, understainding how the pores work is essential to enjoy the non-stick properties of the tawa and to ensure paper-crisp dosas!

Perfect Tawa
For the benefit of prospective buyers (those planning to buy but wavering), dissatisfied current users (those persisting with using but obtaining unsatisfactory results), and drop-outs (those convinced the item is bad and have put it away), I wish to share my experience of all of one week. I was using a non-stick tawa for dosa making. I now decided to buy a Dynamic cast iron dosa tawa. There were three sizes under my consideration: 11.0, 12.0, and 12.5 inches. I was a little confused because the prices were not proportionate to the sizes. I approached the company over phone (for some reason the company does not display it) and by email seeking clarification whether this anomaly in price is on account of difference in quality or for commercial reasons. Although the company gave an assurance (phone conversation) that my query would be addressed, nothing happened. I conclude this company is not customer-friendly. Nevertheless, I ordered and received one 12.5 inch tawa. Delivery was timely. Packing/packaging was good. Although the tawa is said to be pre-seasoned, as a precaution, I decide to season it myself. I applied a thin coat of coconut oil with a silicone brush on the top, bottom, crevices, and sides of the tawa and heated the tawa on a gas flame (medium burner). Smoke was emanating after approximately 4 minutes. I continued heating in this condition for approximately 10 minutes, switched off the flame, and let the tawa cool on its own (approximately 45 minutes). I repeated this process two more times with a gap of approximately eight hours each. My first dosa adhered to the tawa in three-four spots but was salvageable. The second and subsequent dosas came off clean. In this one week, I have prepared five dosas every day and they are much superior to those I was getting using the non-stick tawa. I have got good result also with ragi dosa. Users may need to adjust the batter consistency. It should be neither very thick nor very watery. When dropped from a ladle, it should flow smoothly without breaking the stream. The tawa needs to be heated on medium flame for approximately 5 minutes to allow the heat to reach the periphery. The batter, when dropped, should just sizzle and not bubble. Coat the tawa with oil, using silicone brush or cut onion, for just the first dosa. No oil coating is required for subsequent dosas because there will be enough lubrication from the oil added to the dosas for taste. I am compelled to give 5 stars to this item based purely on its performance in spite of my dissatisfaction with the company. Users may get equally good results from other (and cheaper) brands if used appropriately. However, Dynamic deserves some premium for its good looks.

Nice Product, but NOT designed for Induction top.
Even though it is highly-priced as compared to other Cast Iron Tawas, I decide to buy this because of its overall good rating than others, and also marked as "Amazon's Choice" (this might be a paid label !) Build Quality of the Tawa is good, and the inner surface is highly smooth. ISSUES: One of the product Image claims it works on INDUCTION, CONVECTION besides Gas & campfire. In the video, you can see Tawa spins freely on a flat floor with a slight push. The bottom of the Tawa is NOT FLAT but slightly convex, due to which it keeps spinning when used on the Induction top. Overall a good item, but will not work if you want to use it with an Induction top or / convection plate. I returned the Item, so unable to comment on non-stick properties and rusting.

good quality, great finish - but a few minor issues
very nice quality. solid cast iron and heavy base. very nicely finished as well. few issues The company should have charged a few rupees more and given heat-proof handle coating (either silicone or wood). it is easy to burn your hands because the handles are exposed. the center of the tawa gets heated more than the sides. There is no even heating. So food gets burnt in the center while it remains undercooked at the edges - especially dosas. food sticks to the surface still. probably needs more usage before it becomes more non-stick like

Pleasantly surprised by the quality
I brought a lodge 8" frying pan a few weeks ago and was very satisfied with it. That was my first cast iron pan. So I decided to buy another one. This one I needed for dosa, parathas etc. So I started looking for another lodge pan. But there was one problem. The lodge pan had a handle. The handle on the pan becomes as hot as the pan itself and one needs to buy a cover for it. I tried a couple of silicone handles on my lodge pan, but none were satisfactory. So this time I decided to buy a pan without the handle. I read the reviews of this pan and decided to buy this one. The price was less than half of the comparable lodge pan. So that was an added bonus. But I was wary about the quality of this pan. That worry was short-lived once I received this pan. Turns out this pan was actually of better quality than my first lodge pan. The entire surface of this pan is much smoother finish than the lodge pan. Its build quality is absolutely amazing! It is heavy, flawless in construction, no dents, no imperfections and the finish is almost like a regular stainless steel pan (the lodge pan finish is grainy). It is such a good thing to see made in India products outshine an expensive iconic US brand product. Not having the handle is a big plus. You don't have to worry about accidentally touching it and burning your fingers. The seasoning as it was applied was high quality but I still seasoned it a couple of times (applied peanut oil and heated in the oven face down for one hour on highest heat setting). Then the dosas started turning out great from the beginning. Now after a few weeks of use, it works like a non-stick pan. I recommend buying this pan without any reservations.
