How does this compare to Southeast Asian fish sauce?

While nuoc mam/nam pla smells fishy/briny, the anchovy sauce is pretty brutal. When I first got it it smelled so strongly it was eye-watering. The smell was almost a rotting fish smell as well as fermentation. I just opened it again (I've had it for a few months now) and it has mellowed considerably. It is still pungent, but not like it was. It seems to have more depth in the nose, with a broader spectrum of aromas than fish sauce. I have to admit, I have not had the courage to try the sauce yet, although now I will try to find a way to use it. I am sure a little will go a long way.

How much sugar does it have as it is labeled as syrup? Is it as sweep as maple syrup?

A liquid form of anchovy that may be substituted with anchovy fillets or anchovy paste. Is thinner than it is thick, and does a sweet taste to it. It is not as sweet as maple syrup

Is it normal for this to get foamy on top?

Mine didn’t, so I’m gonna say no.

How long does this last ? Opened or unopened ? How do you store ? fridge ?

Well I had mine for abut 8 months, and I kept it in the refrigerator after I opened it. I never trust food like this if it's not refrigerated, even if it states 'does not need to be refrigerated', Ha!Unopened i would imagine it would last for a couple of years.
