Do you have any guides for the best typical setup for a PS2?

It Is hard to achieve decent picture quality with this device. Bob deinterlacing is causing flickering on the screen as it converts 480i signal to progressive 480p/980p. You may want to try freemcboot mod for ps2 and force it in progressive mod. See YouTube. Personally - only retrotink.

Converting ps1 to play on a digital tv what do I need cable and converter wise to accomplish this?

The Kaico OSSC is one of the best things out there at the moment, imo. So grab one of these. Cable-wise I use a high-quality PS1 to scart lead to connect console to OSSC. But make sure it's of high-quality with a genuine RGB signal. Then a HDMI cable from OSSC to the TV. Btw, the PS1 composite (red/white/yellow) leads won't work with the OSSC as it doesn't read composite signal.

I have a snes, mega drive 2 and a n64, ps1, ps2, ps3 are specific cables i need to connect any of these consoles too this? to this?

I can’t answer for all consoles you’ve listed but I believe an N64 needs to be RGB modded and would presumably connect using either RGB SCART or RGB component cables. A PS2 connects using an RGB SCART cable but the PS3 should just connect straight to your TV through HDMI without going through this. There should be plenty of documentation available for your other consoles though if you do a quick search as they are all very common.
