Q: Do you have to use these inside of the cookwell or simply inside the roaster without the cookwell? Thank you in advance for answering.

It's designed to use with the cookwell with water. The steam from the water is what keeps it warm and from burning to the bottoms of the pans.

Q: will these fit a 22 quart roaster or just the 18 quart? I thought the 22 quart might just be deeper but same interior measurements.

It might be a bit of a stretch for the 22 quart. I have an 18 and find that they fit but because of the Teflon coating on all the parts they can get a bit slippery and can fall in if your not careful. Hope this helps and if there is anyone out there who has found it to work please comment.

Q: Can you actually cook in these or just use them buffet-style to keep foods warm?

I used them in my oven while the turkey was finishing it's last 30 minutes in the Nesco. When they were done in the oven, I just slipped them into their slots to keep them warm during the meal. Worked wonderfully!
