why can't i wash in dishwasher?

You can wash in dishwasher-just be aware that the pan will get discolored because of the harsh soap used in the washer

Will two pans fit in oven side by side?

Depends on the size of the oven. I cannot fit them side by side in my oven. Great pans, though!

Why does the packaging say: "Use of cooking spray is not recommended"?

Maybe be the cooking spray degrades the nonstick surface? You don’t need it. No thing sticks. It’s wonderful!
