It looks like hes wearing regular armor ; when in the show during this battle he had baskarr chestplate . Thoughts ?

Things can get a little tricky when we're creating a set based on an upcoming movie or show. In some cases, we have to base our designs on early drafts or concept art. This is because it takes us a long time to create a LEGO® set, and we want to make sure that it's good and ready in time before the show premieres! We do our best to make sure things are as close to the final show as possible, but if a detail changes during production or a planned scene gets cut, we may end up with a set that's not 100% accurate. Either way, all our show and movie-based sets are okayed by the creators and they're always fun to play with! - Emily, LEGO® Customer Service

Can you see the Mandalorian's face if you take off the helmet?

You can take the helmet off but the head is a plain black piece, no face.

Why does this set not include Baby Yoda? Seems like a completely useless set without him.

Because including "The Child" would have spoiled the big reveal. This set would have gone in to production long before the series launched. The same reason there are still no baby Yoda toys on store shelves.
