Can this be used for a gas insert fireplace?

Yes, it is a millivolt thermostat. It takes two wires from the gas fireplace. There is a safety strip you have to remove to activate the thermostat.

Is this setup to handle AUX heat?

Hi Gilbert, this is a millivolt thermostat that can control a single stage heat only system. You can contact our tech support team at (800) 468-1502 or through social media and we will be happy to recommend you a thermostat compatible with Aux heat. - Maria

Is the off position really off, or just the lowest setting?

Hi Chris, thank you for reaching out! The Off system setting at the thermostat will ask the HVAC system to go off. If you need further assistance, contact us at 1-800-468-1502, or through Facebook and Twitter under Honeywell Home.- Charlie
