how do you store the rest of the cheese?

You can store the rest of cheese in the fridge for 2 weeks for sure and even more

Live in Florida. How is it packed for shipment ?

Mine was packaged with two ice packs and wrapped in foil and an insulated bag. Ice packs were melted, package was hot, so obviously the cheese was warm and had not been cold for a long while. No way I'm eating it. What a waste.
