Damn good coffee
I was very skeptical but bit the bullet and bought the big bag and I am impressed! Tastes great as a drip coffee but the flavor profile really comes out with a pour over. Will definitely be purchasing more from this company. I’ve never had coffee this good at this price point.

I've only tried this as cold brew as I'm not a fan of a light roast hot brew. For cold brew this coffee is amazing, you really do get that blueberry taste with it. Only down side is it doesn't store well. I usually make a batch of cold brew and take 2-3 days to drink it, but with this coffee the flavor starts changing after about a 1.5-2 days. So if you cold brew this, do it in small batches. Also, I'm not sure how "fresh roasted" these beans were. Light roast beans start getting oily after a while and there were a good bit of oily beans on the day I got it. A true fresh roast wouldn't have any oily beans at a light roast.

Expensive coffee still loaded with chaff
I've always removed the chaff from coffee after I roast it because I'm told it makes coffee bland and bitter. Paid over top dollar for this coffee and it's about 10% chaff based on a guess. I poured over flawlessly and zero bloom when I did. Huge disappointment especially considering the price. And yes, it was slightly bitter and not very flavorful. I had to use sweet cream creamer to get it down as it pretty much tasted like and drip coffee on the market. I will avoid this roaster moving forward. One thing though, I have been led to believe that chaff can enhance the flavor for some folks based on personal preferences, this just didn't do it for me .

Love this coffee!
Coffee tastes are subjective I guess, but Ethiopian Sidamo has a light “berry” note. It’s my go to brew. The supplier is great and very dependable.

Awesome Ethiopian coffee
My favourite coffee was once a "8 O' clock" Ethiopian Yirgacheffe, due to its affordability and the subtle blueberry and floral notes. This is basically that, but upgraded. Superb quality, freshness, and flavor.

Not Fresh, Not as Good as the Non-Organic
A few weeks ago I purchased the much cheaper version of this, the "Guji Sidamo" which was an OK coffee, so I figured I'd try this organic version as it said there would be blueberry and lighter roast notes. First off, it was not fresh. The expire date (1 year from roast date) was 2 months past when I got the bag. This is just too old to make good espresso. At $16/lb this is the same price range as some local roasters. When I got the non-organic, it had the same date, but at that time was only 6 weeks old, so usable. Now to the taste. It's on the light end of a medium roast. Meaning it's harder to dial in to prevent sour shots. Usually it's worth that hassle to get the fruity notes. However, on this coffee there were none of those notes present (maybe they were there when it was actually fresh?). So the end result is a coffee that can be bitter and sour at the same time, and has this little narrow range to dial in... and no reward at all for doing that. The non-organic version is just better balanced and easier to dial right off the bat. I did spend some time dialing as best as I could, but it didn't seem to make any difference. For reference I'm using a high extraction basket (3k hole), paper filter on the bottom, screen on top. It was best at a 2:1 shot, but again "best" was really just meh. As a turbo shot it just gets bitter. As a luongo, it's verrry bitter. I'm not buying this again. I *might* get the non-organic version, as it's a pretty good deal, but this organic version was basically a waste of money I should have spent on something local instead.

Nice smell
Not bad, good smell, but, since I'm not an expert drinker or addict, for my personal taste it's a little bit on the bitter side, although I know that for a experimented coffee drinker it would not be the case.
