I have a pizza dough recipe that calls for "brewers yeast" . I want to buy a small amount to try the recipe. Is this the yeast I should be looking at?

This is yeast nutrient. You are looking for brewers yeast not just nutrient. I would recommend an 11g packet of Fermentis Safale US-05 or Safale S-04

can i freeze the unused portion?

Really not sure. My thoughts are that you can freeze bread yeast, so I expect that you can freeze wine yeast.

how many grams of yeast nutrients to use in 5gallon?

20 grams would be 5 tsp. You would use 1 tsp per gallon.
