Is this a windbreaker material (shiny & noisy) or more like khaki material?

If say more of a shiny smooth material, but not necessarily noisy. It’s definitely not like cotton khaki pants. My husband loves his. Fits TTS.

Can this jacket be lightly ironed to reduce wrinkles?

No can't be iron wash hang doesn't keep Wrinkles

Im 5 feet 10 and 190lbs. Whats fits the best?

If you want a jacket with the zipper on the wrong side like a woman’s, then go ahead and get an XL. I sent mine back and bought the TBMPOY Men's Windproof Bomber Jackets Lightweight Running Windbreaker Outdoor Golf Fashion Coat. I really like it. I’m 5’8 and 180 and got the large. The XL should fit you fine.
