Would it work with small quantities, like chopping one onion OR pureeing one tomato ?

Yes it will chop small quantities. I chopped and onion and some celery for potato salad and it did fine. I had to stop it and take my spatula and push the sides down for it to pick up some of the pieces it missed but I love it. It is so easy to clean also even for the small jobs. I chopped olives to make a dip and it was perfect.

How easy it is to clean?

It cleans up real easy. Clean it while it’s fresh and you can spray everything out.

How thick are the slices? I need about 1/4” slices for pickle recipe.

Slicing is adjustable and 1/4 inch thickness is a yes.
