Does this breadmaker leave a hole in the bottom of the loaf when you remove it from the tin.?

Yes there is a small hole where the paddle comes out of the loaf.

how much flour does it use per loaf

For flour, Medium loaf is 400g Large loaf is 500g and XLarge loaf is 600g. 600g is the maximum for this machine.

My breadmaker works on program 1 with white flour, but has a sunken crust when I make wholemeal bread on program 7 or 8. Any ideas?

Two possibilities. 1) It could be the quality of your flour. If you are using flours with only 12%/ 13% gluten/ protein, this will be less problematic with white than with wholemeal, which tends to be heavier anyway. Try switching to an "extra strong" wholemeal flour with 15% or so protein. You will need to add 10% or so extra water to match. 2) You could be adding too much water to your existing mix. A tiny amount either way can make all the difference.

Can manual settings be saved?

Not certain I understand what you are asking. I sometimes buy a malted seed bread mix, which recommends using the basic white bread setting. I select 1 (for basic white bread) and push the weight and crust I wish. Very simple to set.
