What size does it bolt on to

The drawing shows 3/8", but that is tight, so will need to ream that hole a bit. Or you could just drill a 7/16" hole, which works out well. In either case, be sure to start with a pilot hole or you will ruin the enamel coating of your BBQ.

what size is the threaded stem? I am looking for 1/2 npt which is what they tell me my hole is drilled at.

I would steer clear of the analog models like this one. I bought this and mounted it on my smoker and as long as the temp is low, it is accurate. I bought a maverick redi chek a few months later (too notch) and realized that this analog model may creep way past your desired temp but display a lower temp. So the thermometer might show 230 but the temp is actually 300+. If you can swing it, I would go with the better model, such as maverick et732.
