Q: is it necessary to use mylar bags to store rice in or can I simply put rice straight into bucket and seal the lid?

Putting them in Mylar bags with oxygen absorbers will maximize the shelf life of the rice. Buckets do still have oxygen in them, and allow some light through. The Mylar bags prevents all light, and the oxygen absorbers remove essentially all oxygen that is required for spoilage.
