What angle does it sharpen at 15 or 20?

I believe it's set at a 20 degree angle

Can you turn it around and sharpen with the left hand?

Absolutely! The honing edges touch both sides of the knife so the direction you pull from is irrelevant.

Is this hand-held model designed to sharpen 15 degree Santoku knife blades? nagi5145

Not really I would find another way to sharpen these knives but you may get some tips from Work sharp web site

Will the pull through model work well with a pocket knife? i want a sharpener that sharpens both scissors and my pocket knife (which i use often).

It should. However, for an EDC pocket knife, you might consider Work Sharp Precision Adjust Knife Sharpener, although that will not work for scissors. Would recommend both if it fits your budget.
