I understand the notch on the top of the knife acts as a finger groove. Can anyone tell me what the notch on the bottom is for?

The notch on the bottom edge near the heel is for clearance when sharpening and prevents the juice from the steak or meats to get past the heal of the knife and enter the handle and hand area.

Are the steak knives dishwasher safe?

It is recommended to hand wash. Using Dishwasher on any wood or Pakkawood handles may cause additional wear.
