How do you adjust gain?

There is a "Mode" select knob on the back to select between Color, Light and Gain settings. Press the knob to select Color, Light, or Gain then turn to select.

Do the VU meters move even at low volume levels?

Hello. Yes, it can work. It has gain adjustment to suit low and high levels.

Would i be able to use this between a dac (rca inputs to douk amp) and an amp (rca outputs from douk speakers)?

Yes. If you use the right cables. The device has a line in (rca) and line out (35mm . Use a 35mm to rca adapter cable )

Can you use this with an amplifier?

I use it between my computer and Denon amplifier
