I know there's an expiry date on it, but how long does this last once it has been opened?

Once you have opened it. Keep in a cool place and with this size and giving 2 or 3 times a week. It will only last for 2 months max. I would suggest to finish it within 6 months will be good.

Is this suitable for chinchillas?

Not sure - the packaging specifically says for rabbits. I would check with a vet before giving it to a chinchilla.

Not sure when batch numbers change. However, I purchased 2 Fibreplex at the beginning of May 2021, their expiry date was 02/23. Hope this helps.
