WINNER GOURMAND COOKBOOK AWARD for Best African Cuisine Cookbook “An in-depth and truly remarkable collection of authentic Ghanaian recipes. This is the definitive Ghana cookbook.” ― Pierre Thiam, chef and author of Senegal The Akan proverb “The good soup comes from the good earth” elegantly sums up Ghana’s tradition of cooking with seasonal, local ingredients. With an emphasis on locally caught fish and seafood, vegetables, fruits and legumes, Ghana’s cuisine is vibrant, healthful, and eminently appealing. Limited access to wheat and dairy results in a variety of gluten-free, lactose-free, and vegan options using starches such as plantains, cassava, taro, sweet potatoes and millet, and creamy nut-based soups and sauces. In over 140 recipes that represent all regions of Ghana, the authors highlight flavor principles, seasoning techniques, and basic stocks, with later chapters dedicated to snacks, soups and stews, protein entrees, beverages, baked goods, and much more. Sample recipes: Green Plantain Chips Black-eyed Pea Fritters (Akara) Chicken Peanut Soup (Nkate Nkwan) Fresh Fish Stew (Fante Fante) Vegetarian Peanut Stew Stewed Bambara Beans (Aboboe) Party-Perfect Jollof Rice with Chicken Hausa Spiced Porridge (Hausa Koko) Tiger Nut Pudding (Atadwe Milkye) Review: Brilliant Book - I wish I could give this book more than 5 stars. I'm half Ghanaian through my mother, and have recently started taking more of an interest in cooking Ghanaian food. This book has very easy to follow instructions, gives alternatives of where to source ingredients. I also loved the stories of the two ladies, one of whom my mother says she has met. My mother also loves this book, and she is not a person who is easily pleased. In fact, whenever she is around, I don't even have a look in with this book, as she keeps it to herself. Review: A great book - For those interested in cooking food from Ghana, this is an excellent book. The recipes are very straightforward and the end results very tasty. Having the African terms for ingredients is very helpful when shopping for them as well.

Finally a book of my favourites
I bought this for a friend’s birthday. She lived it! I did take a peek at some of the recipes and it has me favourites. My mother used to make so many of these while I was growing up, some I have forgotten, and this book reminded me of them. I may be buying this for myself soon.

Best Buy for Ghanaina food
This is a fantastic and very practical recipe book for Ghanaian food. I bought it for a friend who was interested in African food but am thinking of buying one for myself even though I know and cook the food already.

Excellent African cookbook
Excellent African cookbook. Gives authentic recipes but makes them accessible to American cooks with access information and available substitutions. At the same time, the authors give interesting cultural information on Ghana. For anyone interested in western African cuisine, this is a must buy. The wide variety of recipes have vegetarian and gluten free recipes. Truly an exceptional collaboration.
