what is the HRC hardness of this blade?

Sorry but I don’t have a Rockwell hardness tester. The blade holds an edge and keeps it as good as my other knives

Is this knife really made in Japan?

Per the item description, yes. I don't know why Amazon would lie about this. It's a great knife for the money.

Would anyone happen to know if the blade angle is 15 or 20 degrees?

Sorry I can’t help on blade angle but I can tell you it’s a heck of a deal for the price.
