This model does not have automatic shut-off for the warmer plate or heat tank. Both can be manually turned off.

Does this unit come with the reducer nozzle?

The CSB2B does not come with a flow restrictor spray head, but BUNN can mail a flow restrictor for a new machine. Please send a parts request to https://retail.bunn.com/support/support-request

Can I put in a cup of water & have it drain hot into a cup?

I can't see why not ... but have your catch cup ready, and you may need a bit more than a cup because there might have been a little evaporation from the day before... hope this helps.

is the filter cup holder stainless steel or plastic?

It is plastic, but very sturdy. I bought a stainless steel reusable filter and it's perfect.
