Is the ‘0’ flush with the edge of the set squares?

No, there is a central, marked zero and the values move left and right from that.

Why does this have arrows at 7°, 42° and 75°?

I have no idea what this means, but here is the answer you seek! (from wiki). 'Some variants have extra markings at angles of 7° and 42° (138° and 173°) in addition to the normal 45° and 90° markings to ease dimetric axonometry per ISO 5456-3'

What are the angles for the triangles?

45,45,90 equilateral triangle and a 60,30,90 set square

What angles are the 30cm and 20cm set square ?

Angles are measured in degrees not centimetres. The smallest angle is 30 degrees at the pointed end of the longer triangle.
